Serves 6 Prep 10 min
Cook 15 min + setting
1 x 80g packet strawberry jelly
2 tbsp (30ml) water
1 tbsp (15ml) gelatine
2 cups (500ml) milk
5 egg yolks
3 tbsp (45ml) castor sugar
1 tsp (5ml) vanilla essence
100g (1 slab) white chocolate,
chopped
3-6 strawberries, halved and
quartered
Prepare the jelly according to packet instructions and pour into 6 x ½ cup (125ml) glasses or jelly moulds. Leave to set in the fridge.
For the white chocolate custard, add the water to the gelatine and set aside to soften for 5 minutes.
In a medium saucepan, bring the milk to boiling point, then remove from the heat. Beat the egg yolks, sugar and vanilla together and slowly add to the milk, whisking continously.
Return the custard to the saucepan over low heat and stir continuously with a wooden spoon for about 15 minutes, until it starts to thicken and coats the back of a spoon.
Remove from the heat and stir in the chocolate until it melts. Add the gelatine and stir until completely dissolved. Leave to cool to room temperature.
Pour the custard over the set jellies and return to the fridge for the custard to set.
Serve with fresh strawberries.
