PB&J bread and butter jars

Serves 4-6 l Takes 45 min
Ingredients
8 slices white bread
soft butter, for spreading
125ml (½ cup) crunchy peanut butter
125ml (½ cup) strawberry jam
250ml (1 cup) cream
180ml (¾ cup) milk
2 eggs + 2 egg yolks
80ml (1/3 cup) castor sugar
8ml (½ T) vanilla essence
soft brown sugar, for sprinkling
Method
Preheat oven to 160°C. Spread butter on the bread slices. Spread 4 slices with peanut butter and the other 4 with jam, then sandwich together to make 4 sandwiches. Spread the outsides of the sandwiches with butter and cut each into 4 triangles. Arrange the sandwiches into 4-6 jars or cups.
Combine the cream, milk, eggs, yolks, sugar and vanilla. Pour over the bread and allow to soak for a minute. Sprinkle with brown sugar.
Place in a deep oven tray. Pour in enough boiling water to come halfway up the sides of the jars. Bake for about 35 minutes until just set. Rest for 10 minutes before serving.
Tip: Use croissants instead of bread for extra flair
