Peanut butter surprise cookies

These peanut butter treats have a lovely chewy chocolate center.
Makes 24 | Takes 45 min
Ingredients
60g chocolate, broken into pieces
45ml (3T) cream
125g butter, softened
135ml (½ cup + 2t) castor sugar
125ml (½ cup) smooth peanut butter
60ml (¼ cup) golden syrup
15ml (1T) milk
375ml (1½ cups) cake flour
3ml (½ t) bicarbonate of soda
pinch of salt
Method
Preheat oven to 180°C. Heat the chocolate and cream in the microwave, stirring every 30 seconds until melted. Cool until firm enough to scoop.
Cream the butter and sugar together until light. Mix in the peanut butter, syrup and milk. Sift over the flour, bicarb and salt and mix to form a smooth dough. Cover and refrigerate until firm.
Shape the dough into golf ball sizes. Flatten each on a lightly floured surface and divide the chocolate between the centres. Fold the dough around the chocolate, enclosing it completely, and roll into a smooth ball.
Place the balls on a greased baking tray, leaving enough rising space in between. Flatten slightly. Bake for about 15 minutes until golden. Cool on the tray.
