Phutu (Crumbly Maize Meal Porridge) with Chakalaka

A traditional, mild vegetable curry, served with crumbly phutu pap.
Serves 6 | Takes 1 hr 20
Ingredients
For the porridge
625ml boiling water
5ml salt
625ml maize meal
a knob of butter
For the Chakalaka
30ml olive oil
1 large onion, finely chopped
2 garlic cloves, crushed
1 carrot, peeled and grated
5ml turmeric
15ml mild curry powder
15ml tomato paste
410g tin chopped tomatoes
425g tin baked beans
410g tin corn kernels, drained
handful coriander, chopped
Method
For the porridge, pour water and salt into a large saucepan with a lid. Bring to boil, then add the maize meal. Close the lid, without stirring. Reduce heat to low and simmer for 5 minutes. Remove lid and stir well with a wooden spoon or a large kitchen fork. Cover and cook for about 30 minutes, stirring often to prevent it from burning, until cooked.
For the chakalaka, heat the oil over medium-high heat and sauté the onion, garlic and carrot. Add the turmeric and curry powder and cook for 1 minute.
Mix in the tomato paste. Add the tomatoes, beans and corn and simmer for about 10 minutes until heated through and slightly thickened. Mix in the coriander. Serve the chakalaka with the phutu.
