PICNIC LOAF

Place a few of these savoury loaves on the table and tie up with string until you’re ready to eat.
1 large ciabatta or rye loaf
300g salami
1 cup (250ml) roasted & pickled peppers
1 cup (250ml) fresh basil leaves
1 x Camembert cheese, or the cheese of your choice
1 cup (250ml) sun-dried tomatoes
2 tbsp (30ml) basil pesto
olive oil, to drizzle
Cut the top off the bread and hollow out the base, reserving the inner bread for crumbs.
Fill the hollowed bread with salami, peppers, basil leaves, cheese, tomatoes and pesto.
Drizzle with oil and season with black pepper.
Place the bread top back on and secure with twine or string. Chill in the fridge for 1 hour before serving.
tip
Fill the picnic loaf with your family’s favourites – olives, ham, rocket, cherry tomatoes and marinated Mozzarella are all great flavour combinations.
