ROAST BEEF AND HORSERADISH CANAPÉS

30cm-long baguette bread, thinly
sliced
olive or avocado oil, to drizzle
½ cup (125ml) mayonnaise
1 tbsp (15ml) horseradish
1 tsp (5ml) Dijon mustard
salt and ground pepper
200g sliced rare roast beef, cut into
strips
handful cherry tomatoes, halved
baby leaves (like watercress), to serve
1 Preheat the oven to 180°C.
2 Pack the bread out, on 2 oven trays and drizzle with oil. Bake for about 10 minutes until light golden. Cool.
3 Mix the mayonnaise, horseradish and mustard together. Season.
4 Top each bread slice with roast beef, a dollop of horseradish mayonnaise and a tomato half. Garnish with baby leaves and serve immediately.
