Roasted Halloumi, Bacon and Tomato Tray Bake

Quick and easy – just pop these lovely fresh ingredients in the oven and you'll have a great-tasting meal, packed full of Mediterranean flavour!

Ingredients
For the dressing
1/3 cup (80ml) balsamic vinegar
2 tbsp (30ml) olive oil
1 clove garlic, crushed
1 tbsp (15ml) honey
250g Halloumi cheese, sliced
250g (1 packet) bacon rashers
2 cups (500ml) sourdough bread, torn
2 handfuls cherry tomatoes
2 tbsp (30ml) olive oil
handful basil leaves
Method
Preheat the oven to 220ºC. Combine all the dressing ingredients and set aside.
Place the Halloumi, bacon, bread, tomatoes and oil on a baking tray and toss. Bake for 10 minutes.
Turn the Halloumi and tomatoes and bake for a further 5 minutes or until the tomatoes are cooked and the croutons golden.
Serve with the dressing and basil leaves.
