Rosemary and garlic lamb ribs

Lamb ribs make the perfect finger food, especially when slightly crispy and packed with rosemary flavour.
Serves 4-6 | Prep 10 min | Refrigerate 1-2 hours | Braai 12-15 min
Ingredients
500g lamb ribs
juice of ½ lemon
4 tbsp (60ml) olive oil
3 cloves garlic, chopped
4 stalks fresh rosemary, chopped
salt and ground black pepper
Method
Combine all the ingredients together in a large bowl.
Cover with plastic wrap and refrigerate for 1-2 hours.
Remove the ribs from the marinade and grill over hot coals, turning regularly and ensuring the fat is very crispy.
Serve with baked potato parcels
