SWEET AND SOUR PORK KEBABS

600g pork fillet, cubed
1/3 cup (80ml) soy sauce
1 tbsp (15ml) honey
1 tsp (5ml) dried chilli flakes, optional
juice of 1 lime
2 Granny Smith apples, cored, quartered & chopped
8 bamboo skewers
steamed basmati rice, to serve
fresh coriander and lime wedges, to serve
In a large bowl, combine the pork fillet, soy sauce, honey, dried chilli flakes, lime juice and salt and pepper. Cover with plastic wrap and refrigerate for 30 minutes.
Thread the pork and chopped apple alternately onto the bamboo skewers.
Preheat a griddle pan over medium heat. Brush the skewers with half of the remaining marinade and cook 4-5 minutes on each side or until browned and cooked through.
Serve the skewers with steamed rice, fresh coriander and lime wedges.
