THYME AND CARAMELISED ONION TARTS

3 tbsp (45ml) olive or avocado oil
4 large onions, thinly sliced
2 tbsp (30ml) sugar
1 tbsp (15ml) fresh thyme leaves + extra
salt and ground black pepper
2 sheets frozen ready-rolled puff pastry,
thawed
1 egg, beaten
100g blue cheese, optional
Preheat the oven to 200°C and line a baking tray with baking paper.
Heat the oil in a large non-stick frying ack to basics pan over high heat. Add the onions, sugar and thyme and cook, stirring, for 3 minutes or until soft. Season, reduce heat to medium-high, and cook, stirring, for 3-4 minutes or until caramelised. Set aside.
Meanwhile, cut 8 squares from the pastry sheets and place on the lined baking tray.
Score the edges of the pastry with a sharp knife to create a border. Prick the inside of the pastry with a fork and brush with egg. Bake for 6-8 minutes or until golden brown and slightly puffed.
Place 2-3 tbsp (30-45ml) of the onion mixture into each tart. Top with some blue cheese and fresh thyme leaves.
