Serves 8-10 Prep 15 min
Bake 5-10 min
1 olive or ciabatta loaf, sliced
4 rashers bacon
1 clove garlic, peeled
100g Mozzarella, sliced (or another
cheese of your choice)
1 tomato, chopped
small handful basil, chopped + extra
1 tbsp (15ml) olive or avocado oil
squeeze of lemon juice
salt and pepper
Preheat the oven to 180°C. Place the bread and bacon on separate baking trays and bake for 5-10 minutes, or until both the bread and bacon are crisp.
Rub each slice of toast with garlic.
Combine all the remaining ingredients in a bowl and season well.
Spoon onto the toast, top with bacon bits and extra basil before serving.
