Tuna pancake lasagne

A quick and easy tuna lasagne recipe, using pancakes instead of pasta sheets.
Serves 4 + Freeze 1 | Takes 20 min
Ingredients
3 x 170g tins tuna, drained
250g sour cream
125ml mayonnaise
2 green peppers, chopped
1 bunch spring onions, finely chopped
20 ready-made pancakes
800g jar Napolitano tomato pasta sauce
2 x 200g packets cheese sauce
Method
Preheat the oven to 190°C. Mix the tuna, sour cream, mayonnaise, peppers and spring onions together. Place a heaped spoon of the tuna mixture into each pancake and roll it up.
Divide the tomato sauce evenly between 2 ovenproof dishes. Top with the tuna pancakes, and cover with cheese sauce. Bake for about 15 minutes until golden and heated through.
To freeze
Cover and freeze one of the dishes. To prepare, bring to room temperature, then cook for about 20 minutes until heated through.
