AVOCADO AND CUCUMBER MOUSSE

Prep 15 min + chilling
2 large avocados, stones removed
2 tbsp (30ml) lemon juice
1 tsp (5ml) Worcestershire sauce
1 cup (250ml) mayonnaise
1 cucumber, halved, seeded and
finely chopped
½ tsp (2.5ml) cayenne pepper
1 tbsp (15ml) gelatine powder
¼ cup (60ml) boiling water
salt and pepper, to taste
pita crisps, to serve
crudités, to serve
1 Place the avocado, lemon juice
and Worcestershire sauce in a
food processor and process until
smooth. Add the mayonnaise and
process until well combined.
2 Transfer to a large bowl and stir
in the cucumber and cayenne
pepper.
