BARBECUE PORK SKEWERS

1kg deboned pork shoulder, cut
into large cubes
2 tbsp (30ml) olive or avocado oil
2 cloves garlic, crushed
1 tsp (5ml) fresh ginger
1 tsp (5ml) chopped chilli
2 tbsp (30ml) honey
1 tsp (5ml) sea salt flakes
6 bamboo skewers, soaked in
water
1 pineapple, peeled and cut into
chunks (the same size as the pork)
Mix the cubes of pork, oil, garlic, ginger, chilli and honey together ina large bowl and season with salt.
Thread the pork onto the skewers with pineapple pieces in between.
Grill over prepared coals for about 20 minutes or until cooked on all sides. Serve with a green salad and chilled white wine.
