Biltong & Cheese Muffins

These muffins are uniquely South African and super tasty!
Makes 12 Prep time: 10 minutes
Cooking time: 30 minutes
120g (250ml) wholewheat flour
120g (250ml) cake flour
200g (500ml) biltong, finely chopped
50g (125ml) Cheddar cheese, grated
30ml baking powder
30ml parsley, chopped
3 eggs
200ml milk
100ml cooking oil
15ml lemon juice
pinch of salt
1 Combine all the ingredients and mix lightly. Spoon into greased muffin pans and bake at 180°C for 30 minutes. 2 Allow to cool slightly before removing and serving with butter.
