BOBOTIE SPRING ROLLS

250g ready-made bobotie
2 tbsp (30ml) sultanas
2 tbsp (30ml) flaked almonds
6-8 spring roll wrappers
1 egg, beaten oil, for frying
3 tbsp (45ml) peach chutney, to serve
1 Combine the bobotie, sultanas and almonds together.
2 Place a spoonful of the mixture onto the base of a spring roll wrapper, fold the wrapper over the mixture, fold in the sides and roll up to form a spring roll. Seal the end of the spring roll with a little brush of egg. Repeat with the remaining mixture.
3 Heat the oil in a pan or deep-fat fryer and fry the spring rolls for 3-4 minutes, or until golden-brown all over.
4 Drain on paper towel and serve warm with peach chutney.
