CHEDDAR AND CHIVE BREAD

2 cups (500ml) cake flour
1 tbsp (15ml) castor sugar
2 tsp (10ml) baking powder
1 tsp (5ml) salt
½ tsp (3ml) white pepper
100g butter, chilled and cubed
2 cups (500ml) grated Cheddar
¼ cup (60ml) finely chopped chives
1 egg
200ml milk
extra grated cheese, for sprinkling
Preheat the oven to 200°C. Grease and line a 6cm deep, 21cm x 10cm (base) loaf pan with baking paper.
Combine the flour, sugar, baking powder, salt and pepper in a food processor. Add the butter and process until the mixture resembles fine breadcrumbs. Transfer to a large bowl.
Add the cheese and chives to the mixture and stir until well combined. Whisk the egg and milk together in a jug with a fork and add to the dry ingredients. Mix with a flat-bladed knife to form a soft dough (do not overmix).
Press the mixture into the prepared pan and sprinkle with remaining cheese on top. Bake for 35-40 minutes or until the bread is golden and a skewer inserted into the centre comes out clean. Turn onto a wire cooling rack.
