CLASSIC CHEESE SAUCE

50g butter
2 tbsp (30ml) flour
2 cups (500ml) milk
1 cup (250ml) strong grated
Cheddar
Heat the butter in a saucepan over medium heat until melted and foaming. Add the flour and cook, whisking for a minute until the mixture forms a roux (or paste).
Remove from the heat and slowly start adding the milk, whisking constantly to prevent lumps from forming.
Return the pan to the stove on a medium heat. Cook, stirring, for 5 minutes or until the sauce boils and thickens.
Stir in the cheese until smooth. Season with salt and pepper.
Serve with a griddled steak and chips.
