Corn Fritters

Sweet and crunchy corn bites!
Serves 2-3
Prep 10 min Cook 10 min
15ml butter
3 tbsp (45ml) milk
1 large egg
salt and black pepper, to
taste
¼ cup (60ml) cake flour
1 tsp (5ml) baking
powder
1 cup (250ml) corn
kernels
oil for frying
1 Melt the butter, remove
from heat and whisk in
the milk, egg, salt and
pepper.
2 Sift the flour and
baking powder
together and stir into
the milk mixture and
fold in the corn.
3 Heat some oil in a
pan and drop small
spoonfuls of the
mixture into the oil.
4 Fry for 3-4 minutes per
side over a moderate
heat until golden brown
and cooked through.
5 Drain well on paper
towel and serve
with tomato sauce,
sweet chilli sauce or
mayonnaise and a side
