CREAMY CRANBERRY MICROWAVE FUDGE

1 x 397g tin condensed milk
125g butter + extra for greasing
2 cups (500ml) castor sugar
100g dried cranberries (or raisins if you prefer)
1 Grease a 10cm x 26cm pan with butter. Place the condensed milk, butter and sugar into a glass bowl.
2 Cook on full power for the first 6 minutes, stirring every 2 minutes. Switch to medium power and cook for a further 9 minutes, stirring every 3 minutes.
3 Drop a little of the mixture into cold water. It will form a soft ball when it’s ready. Remove the fudge from the microwave, stir in the dried cranberries (or raisins) and mix well.
4 Pour into the pan and leave to set. Once cool, cut into squares and store in an airtight container.
