Crisp Potato Skins

Preheat the oven to 200°C. Cook
1.5kg large potatoes until just tender
(10-15 minutes). Cool and cut into
wedges. Use a knife to cut the potato
from the skin, leaving about 1cm to
make a thick shell. Brush with oil and
bake on a rack for 25-30 minutes, until
brown and crisp. Season to taste.
