CRISPY BACON AND PINEAPPLE SALSA BURGER

4 basic burger patties
1 tsp (5ml) olive or avocado oil
4 rashers streaky bacon
½ fresh pineapple, finely chopped
½ red chilli, chopped
juice of ½ a lime
handful fresh coriander, chopped
salt and freshly ground black pepper
4 hamburger buns, sliced open
1 cup (250ml) shredded lettuce, to
serve
sweet potato fries, to serve
Preheat the oven to 180°C. Heat a griddle pan and brush the burgers with oil. Cook for 5 minutes on each side, or to your liking.
Place the bacon on a baking tray and bake for 10 minutes until crisp.
For the salsa, combine the pineapple, chilli, lime, coriander and salt and pepper in a bowl and mix well.
Place some lettuce on an open burger bun, then a patty and a rasher of bacon, topped with salsa. Serve with sweet potato fries.
