Crispy Rice and Cheddar Cheese Cakes

Serves 3-4 Prep time: 10 minutes Baking time: 20 minutes
30ml olive oil
1 onion finely chopped
1 clove garlic, crushed
200g spinach
350g rice, cooked
50g Cheddar cheese, grated
1 egg, beaten
50g flour
1 Heat oil and cook onions until golden. Add garlic and spinach and cook for another
2 minutes. Mix together rice, onion mixture, cheese and egg. 2 Shape into 8 cakes, lightly dust in flour and fry in pan until crispy. Drain on paper towel and serve with their favourite dipping sauce.
