Cucumber Cups

Peel and finely dice ½ cucumber. Slice the
remaining half and another whole cucumber into 1cm thick slices. Scoop out some of the seeds to form a small cup. Mix the diced cucumber with ½ cup (125ml) sour cream, a crushed garlic clove, 1 tsp (5ml) chopped mint and some snipped dill. Stir in a small tin of drained pink salmon. Scoop into cucumber cups and serve topped with a sprig of dill.
