Date and Coconut Truffles

Makes 60 truffles
Prep time: 20 minutes
Cooking time: 10-15 minutes
250g butter
180ml (144g) sugar
500g dried dates, chopped
1 egg beaten
1 packet plain tea biscuits (Marie), finely crushed
125ml (40g) dessicated coconut
1 Place the butter, sugar and dates into a medium-size saucepan and heat until sugar has dissolved and dates have softened.
2 Remove from heat and gradually stir in the egg, beating constantly to prevent egg from scrambling.
3 Stir in the crushed biscuits and mix well. Allow mixture to cool and then roll into balls. Toss the balls in coconut and place on a tray to set.
4 Leave for a few hours before placing in paper cases and packaging.
