Makes 20-25 Prep 25 min Bake 12-15 min
2 cups (500ml) cake flour
1 tsp (5ml) baking powder
¼ tsp (1ml) salt
½ cup (125g) margarine
½ cup (125ml) sugar
2 eggs
1 tsp (5ml) vanilla essence
250g pitted dates
1 cup (250ml) dessicated coconut
Preheat the oven to 180°C, and line a baking tray with baking paper. Sift the flour, baking powder and salt into a large bowl, rub in the margarine and stir in the sugar.
In a separate bowl, combine the egg and vanilla essence, reserving 1 tbsp (15ml) of the mixture. Add the egg to the flour mixture and mix to form soft dough.
Pinch off small pieces of the dough and flatten on the palm of your hand. Place a piece of date in the centre of the dough disc and enclose.
Add 2 tbsp (30ml) water to the reserved egg mixture, brush onto the date rolls and dip into dessicated coconut.
5 Place the date rolls on the baking tray and bake for 12-15 minutes until golden.
