Makes 5 loaves
Prep time: 30 minutes
Baking time: 1 hour
400g butter
375ml (300g) sugar
4 eggs
650ml golden syrup
1 875ml (900g) flour
15ml bicarbonate of soda
20ml cinnamon
25ml ginger
750ml hot water
Cream the butter well and add in the sugar, beating until fluffy.
Add eggs one at a time beating well after each addition.
Beat in the golden syrup.
Sift the flour, bicarbonate of soda and spices; add alternately to creamed mixture with water and mix well.
Pour into five 12 x 22cm loaf tins, lined and greased.
Bake at 160ºC for 1 hour until cooked
Remove and cool in tin for 5 minutes before turning onto a cooling rack.
