Gooseberry Fool

Serves 4-6

80ml sugar
5 tbsp (75ml) water
1 lemongrass stalk, crushed
1 orange, juice and rind
1 cup (250ml) Cape gooseberries
2 egg whites, whisked to soft peaks
150ml cream, whisked to soft peaks
finger biscuits or cookies, to serve
1 Heat the sugar, water,
lemongrass, orange juice and rind
together.
2 Add the fruit and poach for
5 minutes. Allow to cool and
remove the lemongrass stalk.
3 Reserve a few gooseberries to
garnish and purée the remainder
of the fruit and cooking liquid.
4 Fold the whisked egg whites and
cream into the fruit mixture.
5 Serve in pretty bowls or glasses
with a biscuit alongside.
