GRILLED PINEAPPLE

½ cup (125ml) butter
½ cup (125ml) brown sugar
2 tsp (10ml) brandy
2 whole pineapples cut into
quarters lengthwise, leaves
attached
vanilla ice cream and fresh
granadillas, to serve
Preheat the oven to 200°C. Melt the butter, sugar and brandy in a small saucepan.
Make incisions across the quartered pineapples and brush with the melted butter mix.
Grill the pineapples in the oven, basting continuously for 15 minutes until cooked.
Serve the warm grilled pineappleswith scoops of vanilla ice cream and fresh granadilla pulp.
