Homemade Chicken Nuggets

Serves 2-4 kids
Prep time: 10-15 minutes
Cooking time: 10 minutes
2 chicken breasts
½ red pepper, finely
chopped
½ onion, finely chopped
1 clove garlic, crushed
1 spring onion, chopped
salt and pepper to taste
2 egg yolks
breadcrumbs for coating
vegetable oil for frying
Roughly chop the chicken into chunks and purée in a food processor. Finely chop the red pepper and onion and sauté with the garlic in a little oil until just tender.
Add sautéed vegetables and chopped spring onion to the puréed chicken and season to taste. Add the egg yolks and mix to form a paste.
Using your hands, form bite-sized balls from the chicken paste and then roll them in the breadcrumbs.
Shallow fry the chicken nuggets in some oil until golden and cooked through. Serve with mayonnaise or tomato sauce.
