Makes 24
Melt 500g milk or dark chocolate in a heatproof glass bowl over a pot of simmering water. Once melted,remove from heat and pour into silicone shaped chocolate or ice trays. Ensure the chocolate forms a thick layer and thoroughly coats the inside of each cavity; turn the tray upside down over a bowl so that any excess chocolate runs out. Scrape any excess chocolate from the tray and freeze until the chocolate has set.
Fill each cavity with ice cream and smooth.Cover with another layer of melted chocolate, removing any excess.
Freeze for 3 hours.
