Serves 4-6 Prep 15 min Cook 40 min
For the sponge
1 cup (250ml) water
1 egg
1 cup (250ml) flour
1 tbsp (15ml) vinegar
2 tbsp (30ml) apricot jam
1 tsp (5ml) bicarbonate of soda
1 tsp (5ml) vanilla essence
1 tsp (5ml) baking powder
1 cup (250ml) sugar
For the sauce
125g butter
½ cup (125ml) brown sugar
½ cup (125ml) milk
1 Preheat the oven to 180°C. Combine all the sponge ingredients in a food processor for 3 minutes to form a smooth batter.
2 Pour into a greased baking dish and bake for 40 minutes or until a skewer comes out clean.
3 For the sauce, combine the butter, sugar and milk in a saucepan and boil for 2 minutes.
4 Prick the sponge and pour the sauce over the entire pudding. Allow the pudding to soak for 30 minutes before serving warm with custard.
