500g beef mince
1 onion, grated
1 carrot, grated
½ cup (125ml) breadcrumbs
1 egg, beaten
1 clove garlic, crushed
1 tsp (5ml) dried chilli flakes,
optional
½ tsp (3ml) dried oregano
3 tbsp (45ml) chutney
3 tbsp (45ml) tomato sauce
salt and pepper
Preheat the oven to 180°C and grease a medium-sized loaf pan with non-stick cooking spray.
In a large bowl, combine the mince, onion, carrot, breadcrumbs, egg, garlic, chilli, oregano, 2 tbsp (30ml) chutney, 2 tbsp (30ml) tomato sauce and season with salt and pepper. Mix well, then press the mixture into the loaf pan and smooth the surface.
Cover with foil and bake for 30 minutes. Remove the foil, combine the remaining chutney and tomato sauce, and brush on top of the meatloaf.
Bake for a further 30 minutes or until the juices run clear when pierced with a skewer. Drain off any excess liquid and place under a hot grill for 5 minutes. Rest in the pan for a few minutes before serving.
