Melon and parma ham wedges

Serves 8 Prep 5 min
1 large sweet melon (spanspek)
8-10 slices Parma ham*
black pepper, to taste
basil, to serve
Cut the melon into wedges and remove the skin.
Wrap a slice of ham around each wedge.
Season with black pepper and serve with fresh basil leaves.
*Substitute Parma ham with any cold meat or ham of your choice.
SMOKED SNOEK PÂTÉ
Nobody can resist a tasty pâté, so make sure you have lots of bread to serve it with.
Makes 1½ cups (375ml)
Prep 10 min + chilling
250g smoked snoek, flaked, bones removed
250g cream cheese juice of ½ a lemon
4 small gherkins, finely chopped
2 spring onions, chopped
4 tbsp (60ml) chopped parsley
salt and freshly ground black pepper, to taste
wholewheat bread, to serve
butter, to serve
Place all ingredients in a food processor and process until smooth. Season with salt and black pepper.
Refrigerate for at least 2 hours.
Serve chilled with bread and butter.
