Melon Salad with Mint Vinaigrette and Rocket

Serves 4

1 small watermelon
1 small spanspek
1 small honeydew melon
2 tbsp (30ml) olive oil
1 tbsp (15ml) lemon juice
2 tsp (10ml) sugar
3 tbsp (45ml) mint, finely chopped
large handful rocket leaves, torn
1 Using a melon baller, scoop balls out of the three melons. Alternatively, cut the melon into cubes.
2 Whisk the olive oil, lemon juice, sugar and mint together and pour over the melon. Toss to combine and chill well.
3 Stir in the rocket leaves before serving.
