60g butter, softened
4 tbsp (60ml) sugar
2 egg yolks
200ml flour
1 tsp (5ml) baking
powder
pinch of salt
For the filling
1 tsp (5ml) vanilla
essence
½ cup (125ml) flour
5 tsp (25ml) cornflour
pinch of salt
1 cup (250ml) white
sugar
3 cups (750ml) milk
60g butter, cubed
4 egg yolks
cinnamon sugar, to serve
Preheat the oven to 180°C. For the crust, beat the butter and sugar together in a large bowl to combine. Add the egg yolks to the butter mixture and mix well. Sift the dry ingredients into a large bowl and add to the butter mixture. Combine well to form a paste
Grease a 23cm tart dish and spread the crust mixture evenly over the base and sides. Blind bake for10 minutes.
For the filling, combine the vanilla essence, flour, cornflour, salt and sugar together in a bowl and set aside. Heat the milk to just below boiling point. Remove from the heat and stir in the dry mixture. Return to the heat, stirring continuously until the mixture thickens.
Slowly add the butter to the thickened milk mixture, mixing until well combined. Beat the egg yolks lightly and mix into the custard.
Pour the custard mixture into the tart base and bake for 20-25 minutes or until set. Allow to cool and sprinkle with cinnamon sugar before serving.
