OVEN-ROASTED BUTTERNUT AND BARLEY SALAD

250g barley
1 butternut, peeled and cut into thin slices
salt and freshly ground black pepper, to taste
1 tbsp (15ml) olive or avocado oil
150g Feta, cubed
½ cup (125ml) flat-leaf parsley, roughly chopped
For the dressing
1/ 3cup (80ml) olive or avocado oil
juice of 1 lemon
½ garlic clove, grated
salt and freshly ground black pepper, to taste
1 Preheat the oven to 180°C. Cook the barley in boiling water, according to the packet instructions. Drain well.
2 Place the butternut on a baking tray, season well and drizzle with the oil. Bake for 20 minutes or until cooked and slightly caramelised.
3 In a medium bowl, combine the barley, butternut, Feta and parsley. Mix well.
4 For the dressing, combine all the ingredients, season well, add to the salad and mix well.
