Peanut Brittle

Peanut Brittle.jpg

Makes 1 tray

Prep time: 40-50 minutes

80g butter

350ml (280g) sugar

125ml golden syrup

250ml hot water

200g salted peanuts

1 Place butter, sugar, syrup and water into a large saucepan.

2 Stir over a gentle heat until all the sugar has dissolved.

3 Increase the heat to high and boil the mixture for about 20-30 minutes without stirring, until hard crack stage is reached. Test by dropping a little mixture into cold water and it should form a brittle thread.

4 Add in peanuts and pour immediately into an oiled baking tray, 18 x 20cm in size.

5 When cool, break into pieces and package.
