Rainbow Popcorn

Makes about 2 litres popped popcorn

Prep time: 20 minutes

Drying time: 5-6 hours

45ml oil

250ml popcorn

500ml (260g) icing sugar

50-75ml hot water

food colouring

1 Place the oil into a large saucepan and heat up.

2 Add the popcorn and cover with a lid, shaking over a high heat until all the popcorn has popped.

3 Pour into a very large mixing bowl and allow to cool.

4 Combine icing sugar and hot water to make a thin glacé icing. Add colouring of your choice.

5 Pour the icing over the cooled popcorn and mix well until the popcorn is completely coated with icing.

6 Spread out onto a tray in a single layer and leave to air dry for 5-6 hours. It will form a crisp coating. Pack as desired.
