RATATOUILLE SPAGHETTI

A healthy vegetarian option that will have even the meat-eaters wanting seconds.
Serves 4 Prep 15 min Cook 30 min
375g spaghetti
2 tbsp (30ml) olive or avocado oil
1 onion, chopped
2 cloves garlic, chopped
1 brinjal, chopped
1 green pepper, chopped
2 x 410g tinned chopped tomatoes
2 tbsp (30ml) tomato paste
2 tsp (10ml) dried oregano
½ tsp (3ml) sugar
salt and ground black pepper
fresh basil leaves, to serve
grated Parmesan, to serve
1 Bring a large pot of salted water to the boil. Cook the spaghetti according to packet instructions,drain and set aside.
2 Heat the oil in a saucepan, add the onion and garlic and fry until golden.
3 Add the brinjal and green pepper and fry for 2 minutes. Add the chopped tomatoes, tomato paste, oregano, sugar and season with salt and pepper.
4 Simmer for 20 minutes until the sauce has thickened and reduced slightly, and the brinjal is tender.
Adjust seasoning.
5 Toss the sauce through the cooked spaghetti and add fresh basil leaves and some grated Parmesan
before serving.
