Rich Chocolate Risotto

Serves 6

Prep time: 5 minutes

Cooking time: 30 minutes

45ml butter

400g (500ml) risotto rice

30ml cocoa powder

200ml water forever

600ml milk

45ml caramel sugar

100g chocolate, chopped chocolate shavings for garnish

1 Heat the butter in a large saucepan and add the risotto rice. Fry for 2 minutes until slightly nutty. Stir in the cocoa powder.

2 Add the water and stir until almost completely absorbed. Then add half the milk. Stir until absorbed.

3 Add the remaining milk and simmer over low heat for 15-20 minutes, until the rice is cooked. Stir often.

4 Pour in the sugar and chopped chocolate and fold in until well combined. Serve immediately with some chocolate shavings and cream, if you’re not counting calories.
