ROASTED PARMESAN ONIONS

6 medium onions, whole, skin on
½ cup (125ml) cream
½ cup (125ml) Parmesan, grated
2 sprigs fresh thyme or ½ tsp (3ml) dried thyme
coarse salt and freshly ground black pepper, to taste
2 tbsp (30ml) olive or avocado oil
1 Preheat the oven to180°C. Simmer the whole, unpeeled onions in salted water until tender.
2 Slice the tops off, trim the base and scoop out some of the flesh.
3 Chop the removed onion flesh and mix with the cream, 100ml of the Parmesan, thyme and season well.
4 Fill the onions with the mixture, place on a greased baking tray, sprinkle with the remaining cheese and a drizzle of oil.
5 Bake for 25-30 minutes or until golden.
