Rosewater and Turkish Delight Cupcakes

Makes 18
Prep time: 15 minutes + icing and decorating
Baking time: 20-25 minutes
100g (110ml) butter
130g (165ml) sugar
3 eggs
45ml rosewater
5ml lemon zest
185g (375ml) flour
5ml baking powder
2ml salt
60ml milk
For the icing
1 batch Basic Butter Icing, pink food colouring, Turkish delight, to decorate
1 Preheat the oven to 180°C. Cream the butter and sugar until light. Add the eggs one at a time, beating well to incorporate. Add the rosewater and lemon zest, and beat well.
2 Sift together the flour, baking powder and salt. Add the dry ingredients to the creamed mixture, alternating with a splash of milk.
3 Line a muffin tray with cupcake papers. Fill each one ¾ of the way and bake for 20 minutes, or until golden brown on top and a skewer comes out clean.
4 Make icing using the Basic Butter Icing recipe.
5 Decorate with chopped Turkish delight sweets and a generous dusting of edible glitter.
