STRAWBERRY TRUFFLES

Serves 4 Prep 10 min + setting

100g (1 slab) dark chocolate,

preferably with 70 percent cocoa butter

250g (1 punnet) strawberries

50g (half a packet) shelled pistachio nuts, finely chopped

1 Chop the chocolate and melt it in the microwave on the defrost setting for 1 minute. Remove and stir. Microwave for another minute or until melted (it will continue to cook after you remove it from the microwave, so rather remove it when there are still a few blocks visible and stir through). It will melt instantly.

2 Dip the tips of the strawberries in the chocolate and allow the excess chocolate to run off before sprinkling over some nuts.

3 Place the strawberries on a baking tray lined with baking paper to set at room temperature (± 20 minutes).
