Trout and Potato Dip.jpg

Place the reserved potato from the potato skins in a food processor with 2 garlic cloves and a splash of olive oil.

Add 80ml water and the zest and juice of ½ lemon. Pulse until smooth before folding in 100g smoked trout, cut into cubes. Season to taste and serve.
