Tuna Quesadilla

A sure hit with the entire family…
Serves 3-4 Prep 15 min Cook 10 min
YOU’ll NEED
3 x 20cm flour tortillas
1 tbsp (15ml) olive oil
2 x tins tuna, drained
¼ cup (60ml) mayonnaise
½ cup (125ml) Cheddar cheese, grated
6 spring onions, sliced
salt and pepper, to taste
3-4 drops Tabasco (optional)
½ yellow pepper, deseeded and diced
½ cup (125ml) Mozzarella cheese, grated
½ red pepper, deseeded and diced
1 Preheat the oven to 180°C. Brush the bottom of a tortilla with some oil and place oil-side down on a baking sheet.
2 Combine the tuna, mayonnaise, Cheddar, spring onions, Tabasco (if using), salt and pepper together.
3 Spread half of the tuna mixture over the tortilla on the baking sheet and sprinkle the yellow pepper and half of the Mozzarella over the top.
4 Cover with the second tortilla and spread the remaining tuna mixture on top. Sprinkle the red pepper and the last Mozzarella over the tuna mixture and top with a third tortilla. Brush the top with oil and bake for 8-10 minutes, or until golden brown. Serve in wedges with salad.
