White Chocolate Terrine

White Chocolate Terrine.jpg

This can be made with dark chocolate if

preferred and is perfect to serve with coffee.

Makes 8-10 slices

Prep time: 15 minutes

Setting time: 2 hours

500g white chocolate, broken up

150ml cream

250g shortbread biscuits, broken onto

pieces

150g toasted almonds

150g pistachio nuts, shelled

icing sugar for dusting

1. Line a loaf tin with greaseproof

paper.

2. Melt the chocolate and cream in a

double boiler.

3. Add the shortbread pieces,

almonds and pistachio nuts and

stir until completely coated in the

chocolate.

4. Pour the mixture into the tin and

allow to set. Cut into slices, dust

with icing sugar and serve.

Take care that no water is mixed

with the chocolate, or it will seize
