Marbled Meringues

A new twist for an old favourite.

Makes about 60 small meringues

Prep time: 15 minutes

Baking time: 1 hour

4 egg whites

250ml (210g) castor sugar

food colouring

Preheat oven to 100ºC. Line a baking tray with nonstick baking paper.

Beat egg whites with an electric beater until stiff.

Add the castor sugar 15ml at a time while beating, and beat until mixture is thick and glossy.

Place a star nozzle into a piping bag. Using a colour of your choice take a paint brush and paint 3 lines up the inside of the piping bag.

Carefully spoon the meringue mixture into the bag and close the top.

Squeeze out onto the lined baking tray – as the meringue mixture passes over the colour it will create a marbled effect.

Bake for 50-60 minutes until dried out and crisp.
