Plum and Rose Tart

This tart tastes as great as it looks.
Makes 1 tart
Prep time: 20 minutes
Cooking time: 45-60 minutes
4 ripe plums
30ml vanilla sugar
30ml rose water
30ml castor sugar
250g Mascarpone cheese
5ml vanilla essence
100g (125ml) castor sugar
60ml cake flour
30ml rose water
3 eggs, separated
Use one pre-baked sweet pastry case. Recipe
Preheat the oven to 160°C.
Cut the plums in half and remove the
stones. Sprinkle the plums with the vanilla
sugar, rose water and castor sugar and set
aside.
Beat the Mascarpone cheese, vanilla
essence and castor sugar together until
smooth. Add the cake flour, rose water and
3 egg yolks and beat until blended. Whip
the egg whites until stiff and fold into the
Mascarpone mixture.
Place the plums in the empty pastry case
and pour the egg and Mascarpone mixture
over. Bake for 45-60 minutes or until the
filling is set.
Remove from the oven and leave to cool.
Transfer to a cake stand and serve with
whipped cream.
