Skate park cake

Equipment

35cm square cake board and 3 toy skateboards.

Ingredients

3 x 480g chocolate bar cakes

7 blue sour straps

2 red sour straps

100cm piece licorice strap

Red, green and blue food colourings

Blue and red writing gel

Buttercream icing

125g butter, softened

1 1/2 cups icing sugar mixture

1 tablespoon milk

Method

Step 1

Make icing: Using an electric mixer, beat butter in a bowl until light and fluffy. Gradually add icing sugar mixture and milk, beating constantly until combined. Tint icing grey using red, green and blue food colourings.

Step 2

Place 2 bar cakes upside-down on a board. Starting 3cm from 1 short end of each cake, use a 10cm round cutter to cut a 3.5cm-deep semi-circle to form a half-pipe (see note). Reserve 1 semi-circle trimming. Discard remaining semi-circle. Place bar cakes, long sides touching, in the back right corner of cake board. Use icing to secure.

Step 3

Using picture as a guide, place reserved semi-circle in front of bar cakes. Cut three 3cm thick x 6.5cm long slices from remaining bar cake. Trim rectangles to 1.5cm high, 2.5cm high and 3.5cm high. Position in front of bar cakes to form steps. Cut remaining cake into a 4cm x 9cm rectangle. Taper sides so top measures 5cm and base measures 9cm. Place next to cake to form a ramp.

Step 4

Spread top and sides of cake with icing. Place blue sour straps along pipe and down ramp, trimming to fit. Cut licorice strap into four 16cm lengths. Place 2 straps on either side of pipe. Cut three 8cm lengths from licorice. Place on top of stairs. Cut two 8.5cm lengths from remaining licorice to place on top of ramp. Cut remaining licorice into two thin 14cm-long strips. Position around semi-circle.

Step 5

Cut 1 red sour strap into a 1.2cm x 16cm piece. Cut remaining red sour strap into a 9cm long piece. Place longest piece along edge of pipe and shorter piece along side of stairs. Use blue and red writing gels to write ‘HAPPY BIRTHDAY' on cake. arrange skateboards on cake and on board. Set aside for 10 minutes for gels to set. Serve.
